Internship in the Cranbury R&D Center – Baking Applications Lab

Studied and wrote a report on the Interactions of phosphates, used as leavening agents, with the different ingredients of a baking dough.

Designed experimental plans to measure the release of carbon dioxide gas in dough mixed in a DRR machine (Dough Rate of Reaction)
This key project for the company enabled to understand how to control the speed of reaction of the phosphates by varying the amount of each ingredient in a recipe

Quality Engineer at MOUF’ REY
Antananarivo, Madagascar
Internship in the largest Industrial Bakery of the Indian Ocean

Developped an HACCP Quality System for bread, croissant and pie manufacturing lines by determining the Critical Control Points concerning Hygiene, Safety and Sanitary Quality at each step of the Process.
This project was necessary for this Bakery which wanted to get new customers like AIR FRANCE (airline company), which has drastic criterias concerning the Sanitary Quality of their dinner rolls

Set up Building Plans and Grinding Process Diagrams

Created a map of all the pneumatic pipes with the destination of the products circulating inside.
This map was very helpfull for the maintenance team to localize easily the blocked pipes and leaks
